Day Four - Fresh Fruit, Eggs and Pizza

 


I just wasn't hungry at breakfast time, so I decided to have the little pot of fruit that Alan gave me the other day.  It was out of date but tasted perfectly fine, Mavis came in when I was nearly finished and cadged a little bit of apple, she's getting very healthy in her old age.  😀


After such a small breakfast it had to be something a bit more substantial for lunch, so I made myself some egg butties.  Two eggs, a finely chopped small onion from the garden and lots of lovely mayo.  Now that the Ancient Grains bread is sliced thicker it seems to be only good for sandwiches for the first couple of days of having it, so the rest of the loaf was added to the freezer after I made my sandwiches.  I finished off the orange juice too, it's a good idea to have a glass of orange juice when you eat eggs as it enables your body to absorb more iron from the eggs.


I've been using the smallest of the homegrown onions up first and now the slightly larger ones are drying in the sun ... while it lasts.  I'm learning not to take a sunny morning for granted so I have my eye on the weather.  These are 'Snowball' onions and have been really handy as you can use them as spring onions while they are growing, and then leave them to bulb out to use as normal onions.


I decided to use two of my free naan breads to make a couple of small pizzas for my tea.


Simply a dollop of this fancy ketchup from the fridge, some of the roasted vegetables from the other day and a sprinkle of cheese.


I added a sliced up beetroot for a bit of extra nutrition and freshness.

Not a bad days eating and very satisfying food too.

  3. Pizza looks delicious and all healthy ingredients! I have some garlic bread in the freezer so I think you have tempted me to make a vegetable pizza for tea! Catriona

    1. Garlic bread makes the most delicious pizza base doesn't it. I always think shop bought garlic breads never deliver as much garlickiness as I want, but as the base to a pizza they add a real depth of flavour.

  4. Great tip about the naan breads as pizza bases. I do love an egg sandwich, today I had some leftover cooked potato, so I put them in a dish in the air fryer, bit of olive oil, few mushrooms cooked for a few minutes then poured in two beaten eggs, topped with grated cheese and cooked for a few minutes more........ketchup liberally added ....... a little strange but very tasty 😀

    1. That sounds like a brilliant concoction, I would eat it all except the mushrooms ... I have never liked them. Strange is sometimes very good though isn't it. :-)

  8. Interesting to read about the eggs and orange juice! I often want some orange juice or a fresh orange when I eat eggs; I thought I was being weird, but, I guess my body was telling me something!

    1. I think we should all listen to our bodies more, they're amazing machines.

      I didn't listen to mine when it told me it didn't want avocados, but everyone else was eating them and extolling their virtues so I tried them. It turned out I'm allergic to them. I got a mildish warning after a single bite, when I tried to eat them again I got agonising stomach cramps. The doctor said the next time will be worse. Happily they are relatively easy to avoid.

  9. Love the naan idea for pizza and added beetroot of which I have some in the fridge, looks like naan pizza is on the menu this weekend:) I love egg mayo sandwiches and that's a great tip about the OJ:)

    1. Oh gosh, it seems I've got everyone fancying pizza. 😀 But it's such a simple, healthy and tasty meal when made yourself isn't it. I'm trying to eat more beetroot as it
      is supposed to help lower blood pressure.
