Cookathons, Meal Prep and a Blank Canvas

 


Last weeks meal prep of Mediterranean vegetables has now well and truly ran out.  They were tasty while they lasted and I got many different meals from them.  


The rhubarb crumble lasted me for three portions, two suppers and one lovely breakfast.

Mediterranean veggies with rice and salmon.  There are more veggies than you can see from this photo, as I heated them up in the microwave in this dish and then tipped the rice and fish on top.

There were also two pasta meals consumed using the roasted vegetables, one with penne pasta and one with spaghetti.  I didn't take a photo on either occasion as they were late in the evenings.


The final portion of veggies went on top of one of the rosemary focaccias, this was absolutely delicious.


I had the other focaccia the next night as garlic bread along with a glass of wine ... it was a good foodie week. 😄


This weeks little cookathon was a simple batch cook of all the vegetables left in the fridge drawer.  I managed to get seven portions of soup altogether, there are two in the large container on the right.  It's very tasty and velvety smooth, just the way I like it.  Now it's Thursday and I have three portions left, so it's worked out perfectly.


It also means that I now have a blank canvas in the vegetable drawer of the fridge, with a nice clean tea towel awaiting my next purchases.

This month has simply flown by, I really don't know where the time has gone.  Now it's time to think of November and what lies ahead for a new month, hopefully it will be a slightly less stressful month for all of us.

  1. The veggies on top of the focaccia looks scrumptious, I do love roasted Med veg. I've done a lot of cooking and baking this week....fast becoming fed up with cooking so it's just as well I've frozen lots of it so I won't have to cook for a couple of days next week! You could certainly do with a less stressful month, Sue, I hope it turns out that way.

    1. Yes, it was really tasty. I've noticed how much cooking you've been doing, it's definitely time to have a break and eat your way through all those lovely homemade ready meals. :-)

  4. Lots of tasty meals. I have used up portions of frozen meat and fish and made some roo for frozen blueberries, peas and green beans, all cheaper than fresh, broad beans are next on my list.

  5. It all looks and sounds delicious. I picked up some groceries today (Oct. 31); it was only my 2nd grocery pick up for the month and most of it is for use in November when my daughter will visit. I came under budget for the month, too, which was nice. Now, I have to do some meal prep and cooking for the weekend! I hope you have a low stress month in November.

  8. It all looks good healthy food! I don't know why I haven't thought to line my fridge drawer with a tea towel. I use kitchen roll. Not any more! :-) xxx

  9. Glad to see someone else uses dish towels as fridge liners! I use old ones but yours is really pretty. Lovely meals and hope November is calmer for you now that your Mum is settled safely. Catriona

    1. This tea towel and the other one I alternate with it are nice thick linen ones that were given to me as gifts. I use my thinner cotton ones as actual towels. Isn't it funny the little routines we get ourselves into without realising. 😄

  10. I've been using kitchen towels to line the fridge drawers but from now on it'll be a t towel - good tip.
