This weeks cookathon done at the weekend was a simple tray of chopped veggies, Mediterranean style. Roasted low and slow in the oven with olive oil, onion granules, garlic granules and lots of mixed herbs.
Half an hour later and the tray of veggies was looking delicious.
While the veggies were in the oven I tipped two tins of tomatoes, half a tube of tomato puree and a large chopped onion in a pan with even more garlic and onion granules, mixed herbs, salt and pepper, and half a teaspoon of sugar and had that puttering away for an hour or so.
Once that had cooled down I ladled some of the roasted veggies and all of their juices into the pan and whizzed it all up with my stick blender to a lovely smooth, thick sauce.
I ended up with five tubs of sauce for the freezer, all one portion sized and a larger two to three portion sized jar, to go in the fridge for this weeks use. I also had a large tub of the Mediterranean veggies and a smaller one that I had over some rice for my tea.
If I remember I will take photos of the meals I make with all this. I forgot to take a photo of the veggies and rice that was the first meal when the lovely veggies first came out of the oven.... but I'm sure you can imagine. 😄
In a bid to find room in my freezer for the tubs of lovely tomatoey, vegetably homemade goodness I had a bit of a sort out and discovered a couple of things that I bought before Christmas. Indeed one that I bought before Christmas 2022 and still hadn't eaten ... it was either going to be evicted or it had to start paying me rent!!
I also had a box of potato waffles that after reading the ingredients label of I decided I wouldn't be eating. You'd think it was just compressed potato and perhaps a bit of starch wouldn't you, I did ... it's not. I'm not really wanting to be eating THIS ... I'd rather eat a potato. These were listed on the Olio App and picked up yesterday. Then suddenly I had space for my sauces.
As I said the other day it's all a journey, not one that I am rushing into but one that I am actually enjoying learning about and putting into action.

Yuck to the Hydroxypropyl Methylcellulose!!! Lots of kids love potato waffles and that's going into their wee growing bodies :-( Yum to the roast veggies and tomatoey sauce though! I'd eat those with grilled halloumi :-) xxx
ReplyDeleteI know!! That really shocked me, I honestly thought that potato waffles were just that ... potato! The roasted veggies go so well with so many different things.
DeleteI love roast vegetables and sometimes do a big pan for the freezer.
ReplyDeleteRoasting just brings out the lovely flavours of all the vegetables doesn't it, and they added a beautiful richness to the sauce.
DeleteThose roasted vegetables look lovely, I can almost smell them from here! My mum wasn't at all domesticated, I grew up on Findus Crispy pancakes, French bread pizzas, Birds Eye potato waffles and Ski Black Cherry yoghurt, its' amazing that I haven't got three heads! xxx

DeleteI used to LOVE the curry flavour Findus Crispy Pancakes, they were in my weekly shopping when I got married in 1978. :-)
One never knows what is added to premade food, does one? Especially since we generally don't read all the lists of ingredients when we buy things. Your tray of roasted vegetables looks good.
ReplyDeleteI agree, we don't know about so many of the things that we have been brought up eating, but I'm finding it fascinating learning step by step, and I have really started looking at ingredients closely and checking out names of things that I don't understand. The veggies were delicious. :-)
