Using the Riverford Vegetables, and Filling the Freezer


I made the soup that I spoke about making the other day, in fact it made so much more than the two portions I thought that I would get.  I ate one meal as a vegetable stew and then blended up what was left into two smallish portions for the next two days lunches and two larger portions to put into the freezer.  It's delicious, so I have something to really look forward to.


I dealt with most of the other Riverford vegetables last week and made up a large tray of Mediterranean style veggies and one that was more tomato and rice based.  I shared a tin of tomatoes and a tin of chickpeas between the two mixes and slightly varied the spices that I used so that they wouldn't taste too similar.


Once cooked they looked like this and they were both portioned into single serving sized helpings, and all but one of each was put straight into the freezer.

I had a helping of the rice and vegetables with a breaded fish portion, and then the next night I had the tomatoey vegetables with some tagliatelle.

 It's nice to have a few things stashed in the freezer for quick and easy meals.  But it does explain why my freezer contents never seem to go down. 😄

    1. We had to pause one delivery while we caught up with using everything that we already had, so the next delivery is next Wednesday. They are very good at allowing switches and pauses right up until two days before delivery. 😃

  2. Lol. I have had same problem since Christmas. I bought lots of cheap store veggies, prepped and froze. Then realised I had no freezer space to actually make and freeze anything with them! Only now starting to see some gaps open up but they get filled as soon as I batch cook. My Christmas bargains will prob feed me till full summer.

    1. My plan this week was to use all the odds and sods of loaves and bread rolls in the freezer to make space. There were a lot more than I expected. 😄

    1. It really is, I just need to go through the freezer drawers and check exactly what I have and organise it a bit more logically. I have been pushing things in here, there and everywhere. :-)

  6. More and more I am trying to get meals into the freezer for those days I do not feel like cooking, or in case of an emergency.

  7. I do wish I was as organised as you. I must do better with batch cooking and freezing. So satisfying seeing no waste.

    1. I find it so satisfying using up all the food in the fridge, turning into meals and then putting it safely in the freezer, so that nothing goes off. Then I realise I have filled the freezer yet again and I have no space left. 😄
