I bought a pack of four salmon fillets from Aldi at the start of the month, on THIS shopping trip and I decided to give myself the mini-challenge of using them in different meals over the course of the following week.
It's nothing wildly imaginative, but I found it interesting.
I cooked all four together while I had the oven on for some banana and walnut muffins.
The first fillet was eaten with boiled potatoes and peas, and the other three were put in a dish to cool down before being refrigerated. As you can see I did extra boiled potatoes, I always think why cook just enough for one meal when you might as well make enough for at least three!! I kept the cooking water from the potatoes to add to a pot of soup and saved the salmon skin to give to Ginger.
The next day I had a salmon and mayo bun for my tea, there were more homegrown tomatoes on my plate as the bun was being made, but I kept eating them ... I managed to save three for the photo. 😄
A couple of days later I had one of the remaining fillets with rice, peas and spinach. It was very tasty and very filling. I do like a lot of rice, but maybe I should switch to brown rice a bit more often. I do love white Basmati though.
Two more days later and I decided to have the final fillet with some noodles. It is a really easy, and very lazy meal. But sometimes those sort of meals just hit the spot. I should have made some peas to go with it, but I thought of this far too late. So it was a nice simple meal, with no green to be seen.
I had more ideas on what I wanted to do with the fillets, but I will possibly be saving them for next time as this time I was in the mood for really simple things.

One with new potatoes, garden green beans, and a drizzle of sweet chilli sauce. One in a hot dog bun with Marie Rose sauce and shredded lettuce. One in a pie dish, with sweetcorn and a little white sauce, topped with mash. And one flaked into spaghetti with peas and a few capers.

DeleteI like your different meals with the salmon fillets. In fact, I have a container of already cooked salmon steaks thawing in the fridge! I'd have one with rice, green peas, and tomato chutney; one with baked potato and salad; one flaked and made into a sandwich; and the last one with mashed potato and carrots and peas. :)

DeleteI keep salmon portions in the freezer and cook them from frozen in the microwave. One portion will make salmon omelettes, or salmon fishcakes for two, or add flavour to two bowls of salad. Granny would mash a bit of salmon with butter for fish paste sandwiches.

I cook like this when I buy a chicken: 1 chicken, 12 servings of food.
I would do that when I used to eat chicken. I would always finish up with making a stock with the bones too. 🙂 It's surprising how just a little chicken added to a dish can transform it isn’t it. 😀

DeleteOne would definitely be with home cooked savoury rice, and another with spuds and peas. I might flake one up in a quiche, not sure about the last one...... nice ideas above.

DeleteI confess, rice is the one thing I don't cook now. We buy sachets and find they are a perfect size for the 2 of us. I do feel guilty about the pouches - hopefully soon they will be able to with soft plastics at the supermarket - but having more of a variety is worth it to us and I know I would never have all the ingredients available to cook them.
ReplyDeleteOur favourites are Waitrose Pilau rice with cardamom, their coconut lime and coriander rice, and their Thai black rice. From Lidl we use Brown rice seeds and quinoa, white and red quinoa, and wholegrain red and white rice. Overall the ingredients are pretty good, there's nothing in them that I can't pronounce!
The rice, and the mixed grain sachets are brilliant these days aren't they and pretty economical too, and of course being able to microwave them in just 2 or 3 minutes is great as a last minute addition to a meal. I do occasionally have one or more in the cupboard but there's none there at the moment.
DeleteI love using my rice cooker for a larger batch of rice for myself, and usually have at least two or three portions done at once, one to eat straight away and two more for the following days or to pop into the freezer. A regular occurrence is to make one portion of rice in it with frozen peas added, and then putting a salmon fillet into the steamer basket on top. A whole meal cooked in 20 minutes and just one 'pan' to wash up. :-)
