Using Up What I Have

 

I am still making it my mission shop for as little as possible, and eat my way through the contents of the fridge.  It's always good to eat up the fresh things first isn't it, before they get so old they can no longer be called such!!

  Although I am now starting to add things to the fridge.  There is nothing worse than opening the door when you are really hungry after a day out visiting and seeing nothing ready to go, so I am now making a few things to stop that problem from happening.

Yesterday I used things from the fridge and the cupboard to whip up a quick tomato and basil sauce.  The basil was struggling to survive and I didn't want it to go to waste.  That tin of tomatoes has had a few birthdays since it's lived with me hasn't it, so it had to be used first. 😁

Here you go, a game of Spot the Difference.

The onion that I used in the tomato sauce was the last one from the fridge, so I will have to buy another bag of them next time I go shopping.  If I had known that I was down to the last one I would have added it to this weeks shopping, which once again was a pair of bananas, only this time with a lemon and a tin of peaches, and I paid for my own this time, a whole 94p for the fruity trio.  😄


The finished sauce, there's not a huge amount but there is enough for a couple of pasta meals and a topping for a homemade pizza, so I have three meal ideas at least.


Although these salmon portions had been in the freezer, the date was now up on them today, so they will all be cooked up and eaten over the course of two or three days in various meals.  I am having my doubts over continuing to eat fish at the moment, so I think I will use up all that I have in the lodge and then have a good think about things.

I always think it's a good idea to re-evaluate what you are eating every now and then.  I don't know about you but I find myself getting into a rut so easily.

  1. Well, it wouldn't do to have a fridge that empty if your only shop was Co-op as apparently since they were hacked, deliveries have gone to pot (locally anyway) and the one in town was reported to have half-empty shelves.

    I often chop and freeze a bunch of spring onions, when they are on offer reduced. They go well in stir fries or a quiche or a risotto.

    1. This hacking of our favourite stores has been terrible hasn't it. M&S have been brilliant at keeping card holders informed throughout it all. I still have a pretty full freezer and lots in the cupboard, so I have no need to worry, even if I do manage to totally empty the fridge. 😃

  2. I cooked up some very similar ingredients myself, but mine have been turned into soup. It's a good idea to re-evaluate. My diet now needs a complete overhaul due to food intolerances. Xx

  3. Yes, it's very easy to get into a rut with meals, isn't it. I'm finding my thoughts turn to more salad-y things when the weather is hot but I do still like to eat fish twice a week. Having said that, Sainsburys are out of salmon for my delivery tonight.....
    M & S and Co-op are having a tough time of it at the moment, Sue, but I've been grateful for the M & S emails to keep us updated on what data was actually stolen. According to the news last night, several cyber attacks are all linked to the same group. I was afraid of this happening sooner or later anyway. Our son is an IT expert in Australia and his company have had several emergency situations too. The hackers demand money but could still sell or publish the stolen data whether their demands are met or not. Very worrying...

    1. M&S have been really good at keeping us all informed haven't they, the email today was especially reassuring. It's like the old hijacking of planes isn't it. Until the various airlines all got together and refused to pay any ransom money, ever, it went on and on. I doubt these computer hackers will be dealt with completely for a while yet.

  4. Agree that it is just so easy to get into a meal rut. Our budget has changed dramatically recently and my mission is to make savings on what we spend on food, it's the one area where I think changes could easily be made, hopefully making us feel less broke each month 😀 Your blog in particular has long inspired me to be more frugal, although until now it's a been a bit of a paper exercise for me, not anymore - and it's good not to feel as though it's just us needing to be sensible!

    1. Oh gosh, if I ever have a large box of fish fingers and a brown sliced loaf, the only meal I can think about having is fish finger butties. I daren't buy fish fingers any more!! :-)

      There are so many people being careful with their money these days, especially where food spending ... which is usually the only area you can cut back on ... is concerned. It's like we've been practicing for this our whole lives, now they need to teach the youngsters while they are still at school.

  6. That's a cunning plan, to use a can of ordinary beans not-in-sauce and afd your own homemade sauce. The usual tins of baked beans are always too sweet and salty for me.
