Reading Angie's post (Small Treasures Revived), the other day reminded me that I had some wraps in the cupboard. Actually I had unearthed them at the weekend when I opened a tin of Christmas biscuits to use as a little nibble when we had guests ... and there they were underneath the tin in the food cupboard.
Everything was still in date.
Angie had 'borrowed' Tania's idea (Living on a UK State Pension - YouTube) to make a delicious tea for herself and Graham. So I thought if it's good enough for everyone else it is good enough for me and it would use up some of the fridge items that I am currently working my through.
Grated parmesan style sage and onion 'cheese' leftover from Christmas, a third of a pack of grated cheddar-style Aldi cheese, some of the now slightly sad looking spring onions from Aldi's cheap Easter veg deal and two of my six remaining eggs. Oh, and at the last minute while I was putting the 'parmesan' back in the fridge I spotted cherry tomatoes, so three of those were added to the ingredients.
Add them all together, pop them in the pre-heated oven for fifteen minutes and what do you get ...
With some of last weeks choppy salad mix and a dash of mayo it made for an absolutely delicious evening meal.
So delicious, that I have to confess to eating the second half of it as well. 😁

ReplyDeleteIt was light enough to get away with eating it all, it just felt a bit excessive to eat a full quiche. I wouldn't have been able to do that with a pastry base for sure. 😄
DeleteIt looks absolutely delicious, no wonder you ate it all! And it's not really stealing as I've seen that idea in lots of places. I think HFW did something similar. In fact, I think I'll go have another look at HFW's book Light and Easy for more inspiration :-) xxx
