In this heatwave I have been careful to keep an eye on the food, even the things in the fridge so I can make sure to use everything up while it is still reasonably at it's best.
Standing out for me the other day was a chunk of red onion and a slightly sad looking courgette, so I added a few other things and roasted them, et voila ... lots of lovely cooked vegetables to add to a few different meals.
The first meal was a freshly baked baguette with leftover tuna and hummus.
With some of the hummus still leftover, I decided to add it and some of the vegetables to some pasta.
It was really tasty, and there were still lots of vegetables left over. So they went into portion sized pots for the freezer.
They may seem like quite small pots even for a single serving, but I find they are more than adequate for me. This is what one pot looked like on a flatbread pizza last time I did this.
Alan switches to cold drinks in this weather, me ... well I drink coffee. Hot, black, caffeinated coffee, no iced versions or fancy pants pretenders pass my lips. 😄

DeleteSome good meals there, and for pennies. I find it hard to eat when it is this hot. Nibble instead which is bad for the waistline! Cold water here and cold diet coke . . .
ReplyDeleteIt is definitely more 'snacky' weather at the moment isn't it. I do drink lots of cold water too, but I do love my coffee.
DeleteI'm with you. I never drink cold coffee. In Morocco, they drink tea even in the hottest weather, and they insisted it would make us feel cooler because our inside temperature would then be hotter than the outside air. Not too sure about that, but in any case I never go for cold coffee. (I'll have an iced tea now and then, though.)
ReplyDeleteI don't even like just warm coffee, it has to be piping hot. I am often to be found heating my cup up again in the microwave halfway through drinking my coffee.

DeleteRoasted veg is one of my favourites and with the air fryer it's so, so easy.

Oh I am more than happy to make a special trip to the microwave to get my coffee piping hot again. :-)
DeleteMy Granddaughter drinks iced coffee but I couldn't drink it. Yuk. Coffee should be hot. I dont even like coffee flavoured chocolates!

Snap, I like my coffee completely unadulterated and hot, and I don't like any coffee sweets, cakes or chocolates. I have no syrups, alcohol or even milks to contaminate the flavour of my coffees.
DeleteI always have coffee to start the day, and then switch to colder drinks like iced tea, lemonade and the occasional iced coffee.

DeleteLovely roast veg and I am just about to cut up three peppers and roast them in the air fryer with a little olive oil. That will give us some delicious additions to salads and sandwiches. Catriona
