Inspiration ... Three Slices of Egg

Yesterday's breakfast on the left, and part of todays lunch on the right.

Saving little bits from one meal as the basis of another has always been something that I like to do, a spoonful of this or that can be the inspiration behind a whole other meal.  I think I really got into this a few years ago when I used to read Suzy's blog Sudden Lunches every day and she would make the most amazing meals which started off from the remnants or purposefully picked out bits of others.

I posted here about her book when it first came out.

I think I am going to have another read through of this to give me even more inspiration.

But in the meantime, I have a couple of spring onions in the garden, and a sad looking remnant of a lettuce and lots of lovely homegrown tomatoes in the fridge, so I see a lovely egg salad bun on my very close horizon.  ๐Ÿ˜

  5. I do like an egg salad sandwich!! When going through chemo, and having lost my taste buds an egg-and-crisp, or egg-and-iceberg-lettuce sandwich gave me a good range of textures to enjoy. I still love them today.

    1. Since losing my sense of smell my taste buds have definitely suffered, so like you I appreciate good textures. I've never tried egg and crisps sandwiches, I'll have to give that a go for sure. ๐Ÿ˜€

    1. I've not had salad cream for years but yes I used to love egg and salad cream sandwiches. And growing up I would make just salad cream sandwiches for my lunch if Mum was out. ๐Ÿ™‚

    2. My daughter once snuck out of primary school at lunchtime and made herself a jam sandwich for lunch. I was out at the time but despite only being about 7 yrs old she got herself back to school on time. I only knew by finding crumbs on the worktop ! Apparently she decided that she didn't like yhe school lunch on offer, the little madam ๐Ÿคจ

    3. Haha, back in the day I guess she was safe enough doing that. Gosh these days 'we'd have kittens' finding that out. (Mancunian for being really worried. ๐Ÿ˜„) You've got to admire her though. ๐Ÿ™‚

    1. The only way I don't like them is undercooked, or 'snotty eggs' as we used to call them. ๐Ÿ˜ณ

    1. Hidden away in tasty baked items can be brilliant, at least you are still getting the nutrients. ๐Ÿ™‚

  14. I've just ordered the leftovers book... I had never heard of a 'snot-egg' until my Aunt made a disparaging comment about someone's choice of a very very soft boiled egg that an ancient family member asked for. She kindly translated it for me. Ugh. Still slightly runny yolk and a properly set white for me!

    1. I hope you enjoy the book, it's fully of really useful tips and recipes. I always thought 'snotty eggs' was a family expression until I heard a man in a cafรฉ a few weeks back asking for his eggs to be 'well done not snotty' ... so it's not just us then. :-)

Yes I don't mind a slightly runny yolk as long as the white is really well cooked, and a poached egg has to be dry for me to be able to eat it. None of this lifting it out of water and slopping it onto my toast!!
